Most hotels run room service from a basement. Ours runs from satellite kitchens on each residential floor — which is why the pasta arrives al dente at 3 am and the soufflé still stands.

The menu mirrors the restaurants: the Seven-Act Table offers an abbreviated in-suite tasting, the noodle bar sends broth at any hour, and breakfast is engineered around how you actually eat it — slowly, in the sun, in a robe.
